Broteria is a modern bakery located in the Rodos residential complex in Odesa, Ukraine. It offers guests the opportunity to enjoy fresh pastries and coffee during a walk to the sea. The bakery is a continuation of the owner's first establishment, the wine bar Vinobroteria, which is inspired by Italian osterias.
The main architectural accent is the open bakery, which, despite its limited space, performs two functions simultaneously: it provides for the bakery and produces the dough for Vinobroteria. A transparent glass partition allows visitors to observe the process of making fragrant and exquisite bread, emphasizing the transparency and openness of the establishment to customers.
After Broteria became popular among locals, the owner decided to expand the range, which led to the development and design of the open terrace Broteria.
To ensure that the wine bar Vinobroteria and the new bakery Broteria harmonized, the designers offered a modern take on the traditional Italian osteria. The first mood boards featured a lot of plants and greenery, which turned into a rich dark green color as the basis for the bakery's design. The designers also wanted to play on the contrast of light and dark surfaces and accentuate the green color with brass elements.
When entering the bakery, guests are greeted by a bar counter, display cases, and order points. This area is separated from the rest of the room by green walls and ceilings, creating a monochrome accent cube that is the center of the space. The bar counter is made to order from quartzite which looks like marble, and the shelves, racks, and wooden countertops are also made to order. Wooden bar stools and chairs from the Polish factory Paged were chosen for seating. The green color is contrasted by a black and white mosaic floor with the Italian inscription "Il pane non vien mai a noia" ("Bread is never boring").
The central element of the bar and display case is a custom-made lamp with the Broteria inscription. Despite its size, it is surprisingly light thanks to its aluminum alloy construction. The metal surface has been converted into a decorative oxide film, first polished to a chrome finish, and then anodized to a golden brass color. Acrylic shades diffuse the light, which is clearly visible from the street at dusk. The brightness of the lighting can be adjusted for comfort depending on the time of day and weather.
Opposite the bar, the designers placed a bar counter with high stools along the window overlooking the terrace. They chose this location for comfort so that guests who are ordering at the counter do not disturb those who are sitting by the window. To the right of the entrance is a small classic table for two with its own gold-colored lamp, which complements the other brass elements in the design.
The terrace design takes into account pedestrian traffic, using a variety of lightweight options for outdoor furniture from the Italian brand Scab Design and custom-made soft sofas to create a welcoming and cozy atmosphere. Decorative planters and carefully selected greenery define the perimeter of the terrace, providing privacy and adding a touch of natural beauty. In addition, black individual awnings and a specially designed double-sided logo with the letter "B" help to identify the establishment.
Reimagining the traditional osteria, the design for Broteria is a unique addition to the Balbek Bureau portfolio, combining modern classicism and a vibrant green palette. Focusing on comfort and atmosphere, the design reflects the changing needs of customers who require additional space to meet growing popularity.
